The 36 - hour sprouting process
We use organic red spelt grains to make our AHO crackers. These grains are left to soak for around 36 hours which brings about the sprouting process. It is at this point that the grains are at their nutritional peak and in order to keep them as close to this state as possible, we dehydrate them for 2 days at only 42°C. In doing so we achieve that optimal cracker texture, whilst retaining all of the nutrients which are usually otherwise lost in processes like baking which require high temperatures. And there we have it: a 4-day process to create the nutrient packed superfood you need for a healthy, balanced diet!
