About Sprouted Grains

Sprouts are produced when dry grains or seeds are left to soak in water, a process which brings them to life! In coming into contact with water, the grain is effectively told that it has finally met the conditions required for it to grow successfully and so it begins its journey by bursting free from its protective outer shell! What’s happening on a molecular level is essentially a ‘nutrient-explosion’ in which a number of different enzymes are activated, which in turn transforms the nutritional make-up of the grain.

Sprouting sets in motion a process of construction and destruction, where existing substances such as starch, proteins, vegetable oils and other substances are broken down and transformed. Starches which are hard to digest become easily digestible disaccharide, proteins are broken down into essential and usable amino acids, vitamins are potentiated and important enzymes such as phytase are activated. In contrast to white flour, the important dietary fibers within the shell are retained and many important micronutrients are made available for the body to use. The germinating grain breaks down a large part of the demineralising phytic acid and the activated enzymes in the sprouts encourage good digestion.

White flour was brought in all over the world  to resolve difficulties caused by anti-nutrients, by providing an easily refined and so easily digestible alternative. By getting rid of the outer shell anti-nutrients like phytic acid are eliminated; albeit at the cost of important nutrients like vitamin B1, B6 and B9.

Several fibres which are essential for gut health are also removed, making white flour a less nutritionally dense nutritional source than its wholegrain counterpart; though nevertheless the more preferable version of grain for easy digestion.

Additionally, white flour products release a lot of insulin in the body, which can cause blood sugar levels to fluctuate. Because they have more calories and fewer nutrients, white flour products lead to a faster increase in body weight and should, accordingly, not form the basis of a healthy and balanced diet. 

Vollkorn

Each grain and seed has its own defence which prevents it from being eaten, namely phytic acid; an anti-nutrient. Phytic acid binds important minerals (such as zinc, iron, phosphorus, calcium and magnesium), and blocks enzymes. This means that the nutrients cannot be used by the body whilst they are being digested in the small intestine.

The dry whole grains that you find in most shops are ‘in sleep-mode’ - or rather inactive- , meaning that they still have this naturally occurring protective layer. When you consume whole grains or whole grain flour, your body takes on a considerable amount of this phytic acid, which makes it difficult to absorb other minerals. The grain overall contains many minerals- found mainly in the outer shell-, but these are unfortunately bound to the phytic acid and are accordingly excreted with it. Whole grain products also sit heavy in your stomach and can lead to a long-term demineralisation, since they sponge up minerals which are essential for a healthy organism.

The 36 - hour sprouting process

We use organic red spelt grains to make our AHO crackers. These grains are left to soak for around 36 hours which brings about the sprouting process. It is at this point that the grains are at their nutritional peak and in order to keep them as close to this state as possible, we dehydrate them for 2 days at only 42°C. In doing so we achieve that optimal cracker texture, whilst retaining all of the nutrients which are usually otherwise lost in processes like baking which require high temperatures. And there we have it: a 4-day process to create the nutrient packed superfood you need for a healthy, balanced diet!
